Although you know a lot about your date (where the beans are from, how they were processed and cared for), you can’t help but get excited about what you are going to experience. Just like any first date, you must plan out what you are going to do (how are you going to roast this bean). With the first cupping, it is like your first kiss…. you savor it, you taste it and all of your senses are awakened and alive! But don’t fall head over heels in love! Because inevitably you will be left heart broken, my friends, when you have tasted the last of that coffee roast. Each roast is one-of-a-kind. Each season brings slightly different flavors. As a roaster, you repeat the cycle over and over again: the first date, you develop a relationship and then goodbye.

The richest countries in the world consume beans that have been grown and processed in the poorest countries of the world. When we have visited coffee-producing countries, it is amazing to see just about every family yard being used to grow coffee plants. Coffee is a decentralized cash crop where everyone can be a entrepreneur.
